Tuna Cake Po-Boys

Ingredients

For the Tuna Cakes

  • 3 Cans Chunk Light Tuna in Water

  • 2 Eggs

  • 1/2 Cup Panko Breadcrumbs

  • 2 TBS Fresh Italian Parsley, Chopped

  • 2 TBS Red Onion, Diced

  • 2 tsp Old Bay Seasoning

  • 1 TBS Olive Oil


For the Hoagie

  • 4 Orowheat Keto Hot Dog Buns

  • 1 Roma Tomato, Sliced

  • 1 Cup Shredded Lettuce

  • 1 Lemon


For the Cocktail Sauce

  • 1.5 tsp Prepared Horseradish (or less if you want it less spicy!)

  • 4 TBS Ketchup


Instructions

  1. Completely drain all 3 cans of tuna.

  2. In a large bowl, combine 3 cans of tuna, 2 eggs, 1/2 cup of panko breadcrumbs, 2 TBS chopped Italian parsley, 2 TBS diced red onion, and 2 tsp Old Bay.

  3. After mixing, use your hands to form 6 equal sized patties - I used my scale to do this!

  4. Preheat your skillet to a medium-high heat.

  5. Once your skillet is preheated, add 1 TBS of olive oil.

  6. Once your oil is hot, place all 6 tuna cakes into the skillet and cover with a lid.

    **These can be fragile if you aren't careful, once they have been dropped in the pan, try not to touch them too much until it's time to flip them!**

  7. Flip once the first side has turned a crisp golden brown (approximately 2 minutes).

  8. Cook the other side until its nice and golden.

  9. Remove from the pan and let cool slightly.

  10. While your tuna cakes cool, in a bowl, add 1.5 tsp of prepared horseradish to 4 TBS of ketchup. Mix well and set aside.

  11. Take your buns and heat them in the microwave for 15 seconds.

  12. In each bun place 1.5 tuna cakes (broken in half so that they fit), sliced tomato, and shredded lettuce.

  13. One serving is 2 loaded rolls! This recipe makes 4 rolls (aka 2 servings).

  14. Serve with a lemon wedge, and half of the cocktail sauce!

Pro Tips

  1. When I made this for the first time, I actually made each serving separate in two different bowls to make sure that I had the proportions right. So, if you only want to make one serving, use 1.5 cans of tuna, 1 egg, 1/4 cup panko, 1 TBS parsley, 1 TBS chopped onion, 1 tsp Old Bay, and 1/2 TBS of olive oil for cooking!


  2. These are messy! Don’t expect to be pretty chowing down on these!
